I like watching his show because he blends in the science behind the food, so it's not a piece of crap show like "Semi-Homemade" that focuses on the "prettiness" of things. I think if you can understand the why of cooking and not just the how, it allows you to be a better cook overall so when you're trying that new recipe for the first time you are already sort of familiar with the methods you'll be using from your "science of cooking" knowledge.
